One-Pot Lemon-Garlic Chicken with Rice and Spinach

A zingy and garlicky one-pot chicken dish accompanied by rice and a boost of nutritious green spinach.
Ingredients:
- 1 1/2 lb chicken breast
- 1/2 yellow onion
- 1/4 cup fresh parsley
- 2 tbsps olive oil
- 2 1/2 tbsps minced garlic
- 1 1/3 cups brown rice (dry)
- 2 cups chicken broth
- 2 lemons
- 8 cups spinach
Instructions:
- Cut chicken breast into 1-inch cubes and season with salt and pepper. Peel and thinly slice onion. Coarsely chop parsley.
- Heat olive oil over medium-high heat in a pot or Dutch oven. Working in batches to avoid crowding, add diced chicken breast and sear 2 to 3 minutes, until lightly browned. Remove to a plate and repeat with remaining chicken.
- Reduce heat to medium and add garlic and onion to the empty pot; cook 2 minutes, until fragrant. Add rice, stir and toast 1 minute, until lightly golden.
- Add chicken broth and a pinch of salt and pepper. Cut lemon into wedges; juice half the wedges and stir 1/4 cup juice into the skillet. Bring to a boil, then reduce heat to low and add chicken breast back in, stirring to combine. Cover and cook 25 to 35 minutes (according to rice package directions) or until all liquid is absorbed. Remove from heat.
- Stir in spinach and let sit 1 minute. Divide onto plate and top with parsley. Serve with the remaining lemon wedges and season with salt and pepper to taste.
