Mason Jar Chicken, Pesto, and Spinach Soup

Ingredients:
  • 12 oz Rotisserie chicken
  • 1 red bell pepper
  • 4 chicken bouillon cubes
  • 1 1/3 cups white beans
  • 4 cups spinach
  • 1/2 cup pesto
  • 1/2 baguette
Instructions:
  1. Shred rotisserie chicken into bite-sized pieces. Remove top and ribs from red bell pepper and coarsely chop.
  2. In a large heat-proof jar or container with a lid, combine bouillon cube, white beans (drained), spinach, rotisserie chicken and red bell pepper. Cover and refrigerate until ready to eat.
  3. Add 4 cups hot water to the container and stir well to dissolve the bouillon cube and wilt spinach. Stir in 1/4 cup pesto.
  4. Slice baguette into thin rounds and toast if desired. Spread remaining 1/4 cup pesto on crostini and enjoy with soup.
